From bold flavors to its new family range, Mindful Chef is redefining what healthy eating looks like across the UK

Creating new and exciting yet healthy recipes can be a chore for many of us, but as the UK’s highest rated recipe box, Mindful Chef offers a selection of chef-curated, flavor-packed meals that promise to deliver healthy nutrition without compromising on flavor. Alongside delicious meals, it is the convenience of Mindful Chef’s model that shines through. Customers can choose between two and five dishes to serve one, two, or four people each week, and can select the required delivery day and subscription frequency. Ingredients for the chosen recipes are then delivered pre-portioned with a recipe booklet, eliminating food waste and enabling convenient cooking.

Passionate about quality, Mindful Chef uses top quality ingredients like free-range chicken, responsibly-sourced fish, and award-winning seasonal produce, as well as supporting British farming and fair pricing. The company’s recipes also cater to varying dietary requirements, including gluten-free, plant-based, and flexitarian options. With recipes ranging from Mediterranean lentil salad with quinoa, avocado, and tenderstem broccoli to grilled Baharat chicken with chickpea rice and minty sumac slaw, there are options to satisfy all preferences and tastebuds.

Since we last spoke with Mindful Chef around one year ago, there have been some interesting developments across the company, including the launch of its family range. We sit down with Jesse Kempner, Head of Food, and Sasha Watkins, Head of Health, to learn more about what’s been happening. “It has certainly been a busy year for us as we’ve continued to expand our weekly menu offering, now with 28 recipes each week, and we’ve also worked on a new brand refresh,” Jesse opens.

“A big focus has been listening closely to our customers, shaping everything from new flavor profiles to the development of our new family-friendly range. We’ve also strengthened our partnerships, bringing restaurant-quality dishes into people’s homes. We worked with Bold Bean in January this year, for instance, creating a series of delicious, high-fiber recipes including chicken miso soup with butter beans, and roasted squash and braised beans with an artichoke dressing.”

Sasha adds: “We’ve done a huge amount from a health perspective, and this is an area we’re proud of, as we know the nutritional excellence of our recipes is one of the primary reasons that new customers join and stay with us. We’ve continued to refine our nutritional standards to make sure that every meal supports our customers in their daily lives. That means a lot of balanced meals built around plants, fiber, and whole foods that are simply joyful and easy. We’re also trying to help customers to meet their five-a-day as only one in ten children in the UK regularly meets that target. We’ve also seen more customers turning to us for consistency and reassurance in a world where nutrition advice can feel overwhelming.”

Lasting impact

With new recipes constantly being added to Mindful Chef’s selection, research and development is key. “Development always starts with the customer,” Jesse states. “We look at how people cook and eat at home; which cuisines and ingredients excite them, what they’re struggling with, where they need inspiration, and ways we can make cooking easier. We believe mid-week meals should be accessibly priced, but we also offer more adventurous and interesting options for the real foodies who want to use us for weekends or special occasions.

 “We know that Mindful Chef customers absolutely love local, seasonal ingredients, so we curate dishes around those,” Jesse continues. “We spotlighted Yorkshire forced rhubarb in our Easter menu, for instance, and British-grown asparagus featured in lots of lovely spring dishes this year. From there, it’s about balancing flavor, nutrition and accessibility. We work closely with suppliers to source high-quality ingredients at the right price point, and we design recipes that make the most of those ingredients without unnecessary complexity or food waste. Using seasonal produce, flexible components and globally inspired flavors allows us to create meals that feel exciting but still work for everyday life and budgets.”

 As Jesse highlights, every recipe is designed to balance taste, nutrition, and affordability, and the health aspect is overseen by Sasha. “The idea that taste and nutrition are at odds is something we really challenge at Mindful Chef,” she says. “For us, a meal isn’t truly healthy unless people actually enjoy eating it and want to come back to it again. We focus on whole foods, balanced macronutrients, a good source of fiber, and fruit and vegetables, while avoiding unnecessary additives and refined sugars and carbs. Just as importantly, we think about satisfaction, as we want our meals to fill people up and have a lasting impact.”

Flexibility for family life

Mindful Chef’s latest development, its new family-friendly range, is currently in a soft launch phase with a full rollout planned later in 2026. Designed to offer familiar, flexible, and easy-to-cook meals for busy weeknights, this range answers customer demand for recipes that suit the entire family. “Too often, meals aimed at children rely on refined carbohydrates, heavy cheese, and unhealthy processed ingredients, with little variety in vegetables or whole foods,” Sasha explains. “It also tends to mean cooking separate dishes – one for the kids, another for the adults. That’s not how we do things; this range enables the whole family to enjoy meals together, with a strong focus on balanced nutrition for both children and adults.”

Elaborating on the family range, Jesse continues: “These recipes are designed specifically for shared eating. We’ve created options for younger children like baked cod nuggets with sweet potato fries, peas, and broccoli, as well as reimagining more adventurous favorites, like curries and chili, into gentler, more approachable versions that still deliver on flavor. Other options include hidden-veg bolognese, grilled vegetable risotto, and a sticky hoisin salmon traybake with brown rice noodles. Importantly, the range still delivers everything people expect from Mindful Chef – high-quality ingredients, bold flavors, and nutritional balance, but with an added layer of flexibility and ease for family life.”

However, creating the family range didn’t come without its challenges, as navigating different preferences within the same household is a complex task. “Children often gravitate towards familiar flavors, while parents are looking for nutritional value, new flavors and ingredient variety,” Jesse shares. “Our approach was to meet in the middle by creating recipes that feel recognizable and approachable, but are built with whole, nutrient-dense ingredients. Small details like allowing elements to be added or adjusted, such as the spice levels of a chicken curry or adding carrots and peppers as crudites to keep the meal interesting for little ones, can make a big difference.”

With the new family range on the horizon and an innovative approach to continuous recipe development, Mindful Chef is showing no signs of slowing down. Its ability to push creative and nutritional boundaries sees the company offer deliciously healthy meals to people across the UK, whether it’s a mid-week meal or weekend showstopper.
