                當日本擁有 350 年歷史的傳統酒造七賢(Shichiken)遇上法國米其林三星名廚 Alain Ducasse,一場融合東西方匠心的味覺革命就此誕生。兩位對工藝抱持絕對尊重及精益求精的匠人惺惺相惜,攜手推出氣泡清酒。 兩人聯乘的氣泡清酒延續七賢的「貴釀酒」傳統技藝,更融入國產櫻花木桶陳釀與香檳式的瓶內二次發酵工藝。以山梨縣純淨水源為基底,揉合地中海蔬菜與海鮮的靈感,帶來乳酪發酵醇香、野草莓與茴香的清新爆發,木桶賦予的甘醇微苦餘韻悠長,完美融合法國傳奇名廚 Alain Ducasse 及七賢 Sichiken 主理人北原對馬 (Kitahara Tsushima) 的味覺藝術。兩人此番東來作巡迴宴席,同時接受 GQ Hong Kong 訪問,大方分享酒造工藝與星級法國菜結合的種種細節。 GQ 專訪:世紀廚神 Alain Ducasse 當初為何想與日本酒造合作釀造氣泡清酒,而不是選擇香檳酒莊或生產其他氣泡酒?  我們與七賢酒造的合作從來不是要做出香檳風格的產品,而是希望創造出一個擁有自身身份的飲品——既反映日本的風土,也融入我個人的料理哲學的成品。當我第一次品嚐七賢的清酒時,我的第一印象是氣泡很輕盈,散發出對大眾而言非你具新鮮感的香氣,而且擁有非常強烈的個性,這些特質讓我覺得它有潛力成為世界級的氣泡飲品。 法國料理與日本料理皆被聯合國教科文組織列為非物質文化遺產,這款清酒是否象徵兩大文化的橋樑? 這款汽泡清酒不僅是日本與法國之間的文化橋樑,更是擔當了讓人歡聚的獨特角色。四年前我創立了「日本料理學院」(Collège Culinaire du Japon),七賢酒造也是成員之一,目的就是保護與推廣日本的飲食工藝。在這個意義上,我們早已搭建了兩國文化之間的橋樑。 氣泡清酒介於香檳、精釀啤酒與傳統清酒之間,您認為它菜單上,最適合用來配搭哪一道菜?這是個很有趣的問題,因為推出新品而舉辦全球巡迴發佈會,讓我們發現它可以輕鬆搭配前菜、主菜,甚至甜點。我的每位主廚都有不同的看法與做法,這也證明這款氣泡清酒能在任何餐桌上找到最適合它的配搭,非常百搭多樣。 如果只能從您目前的菜單中選一道招牌菜與這款氣泡清酒搭配,您會選哪一道?我最近於東京 Esterre 的晚宴中,有一道以士多啤梨為主角的甜點——「士多啤梨花、清酒泡沫、Mascarpone 冰淇淋」,士多啤梨與 Mascarpone 的香氣在口中綻放,隨後轉為滲着細緻的甜味與苦味,跟這款汽泡清酒搭配起來算得上完美。 GQ 專訪:七賢 CEO 北原對馬 這支氣泡清酒如何體現你們兩者的特色?Alain Ducasse 的料理以地中海的蔬菜與海鮮為中心,而蘋果酸(malic acid)是不可或缺的元素。因此我們使用了能產生蘋果酸的酵母與釀造方法,這在清酒中相當罕見。在製作過程中,我們將部分原酒冷藏在櫻木桶中陳放數個月,目的是做出溫柔口感,同時保留甜美微酸的櫻花風味。 七賢是山梨擁有 350 年歷史的傳統酒造,使用瓶內二次發酵釀造氣泡清酒,當中最大的挑戰是甚麼? 最大的挑戰是不添加任何糖分,僅利用米澱粉轉化的葡萄糖,來達成穩定自然的氣泡。這在酒精發酵與碳酸發酵的平衡上非常困難。製作過程中,我們只將米精磨到約 70%,避免過度拋光,以保留米本身的鮮味與複雜的風味。 Photo Courtesy of Shichiken @ Facebook…
