The Buckinghamshire star, 34, followed up his Paris Paralympic triumph with victory in the F13 javelin event in New Delhi.
Pembroke, an avid home beer brewer back home, tore his right hip adductor just four weeks before the event to throw his participation into doubt.
But he made a miraculous recovery to launch a season’s best distance of 68.51m and return to the summit of the podium.
Two-time Paralympic champion Pembroke, the British team’s co-captain here in India along with Anna Nicholson, said: “It was a relief – I didn’t tell anyone, but I haven’t thrown a javelin for four and a half weeks.
“I haven’t done anything apart from a few run-up drills, so I didn’t know what I had in me.
“I was just trying to find my head out there – I’m ecstatic with the win, but I’m always looking to push my performance and the world record more and more.
“Without any injury I’d be a bit disappointed – but I went out and smashed it, so it’s great.
“I’m absolutely ecstatic that I’ve got the gold – but I’m always looking to push that world record.”
Pembroke, who also won Paralympic gold in Tokyo, brewed a special beer called ‘Paris Gold’ ahead of last year’s Games to ‘visualise’ defending his title.
And speaking on how he will celebrate in New Delhi, he said: “We’ll have to see what craft beers we’ve got in the hotel!
“Maybe I’ll have to brew a Delhi Gold to celebrate this one!”
Pembroke is one of over 30 British athletes out in the Indian capital, with the team now sponsored by official finance partner Novuna.
He was voted in to captain the team out in New Delhi and led from the front with a gutsy performance.
Pembroke fell short of his world record of 74.49m but can take significant pride from his efforts given the circumstances.
Back home, Pembroke’s wife Martina is heavily pregnant and the pair are expecting their first baby next month.
He added: “Our team is amazing – we have such strength in it, with seven debutants and they’ve all done so well.
“Thinking about my wife, my beer brewing and injury – there’s a lot that goes on in your head in these big competitions.
“A lot of it is up here, rather than the actual physical attempt.”
