The ingredients required are:

Rawa (sooji)
Poha
Curd
Green chilli
Ginger
Fresh coriander
Salt
Baking soda
Oil

For the Tadka:

Oil
Mustard seeds
Curry leaves

How to prepare

To prepare the dish, start by adding lauki, rawa, poha, curd, green chilli, ginger, fresh coriander and salt to a blender. Blend everything together until you get a smooth, lump-free batter. Next, fold in a little baking soda along with a small amount of oil, mixing gently to keep the batter light and airy.

Grease a steaming tray or mould and pour the prepared batter into it, spreading it evenly. Steam for 12 to 15 minutes, or until the dhokla is fully cooked. Once done, allow it to cool for a few minutes before cutting it into bite-sized squares.

For the finishing touch, heat a little oil in a pan and prepare a simple tempering by adding mustard seeds (rai) and curry leaves. Pour the hot tadka evenly over the dhokla and serve warm as a wholesome breakfast or evening snack.
