Eating healthy just got easier thanks to this ‘unique’ Metro Detroit food establishment

Finding great food on the go in Metro Detroit can be easy, but finding healthy options has often been a challenge — until now.

Unique Quesadillas, a food truck that has been open for two years, started with a fully vegan menu.

Owner Darnell Copland said the seasonings and flavors they use worked so well with real meat that they added regular options to the menu, which I witnessed firsthand on Sunday (Aug. 3) in Royal Oak.

I am a picky eater, so many food options are not available to me, which Copeland, 40, said he had options for someone such as myself.

So, he whipped up a gluten-free spinach wrap with chicken and a quesadilla with mushrooms and cheese for me, while my co-star, Carla Grissom, opted for the shrimp Doritos nachos.

“We promote healthy eating options with all dairy-free products if needed, and no pork has ever entered our truck,” Copland said. “We have a flavor that’s hard to match. Our vegetables are fresh daily.”

Copland, 40, is currently studying healthy eating habits to further health awareness.
