GOLDEN VALLEY, Minn. — Minnesota-based chef Emily Maxson has released her second cookbook, “Real Food. Every Day.,” featuring 134 recipes that emphasize fiber-rich, plant-based foods designed to support gut health.

The cookbook, similar in approach to Maxson’s first book “Emily’s Fresh Kitchen: Cook Your Way to Better Health,” offers simple and adaptable recipes using whole food ingredients.

“Real Food. Every Day.” places particular emphasis on foods that foster a healthy gut microbiome. Many main-dish recipes include both plant-based and traditional animal-based options.

Beyond recipes, the book provides guidance on reading food labels, cooking techniques and a list of recommended ingredients. Maxson advocates for focusing on ingredients rather than calorie counts when evaluating food choices.

The chef, who has a personal story of healing through food, addresses what she sees as an imbalance in nutrition discussions. She argues that while protein has dominated healthy eating conversations, fiber deserves more attention and can be added to diets naturally without supplements or powders.

Maxson demonstrated a few of her high-fiber breakfast recipes on KARE 11 News Saturday, including Coconut Yogurt Chia Pudding, Cherry Cauliflower Smoothie and Grain-Free Apple Cinnamon Granola.
