Alex Drummond is carrying on her mom’s traditions in the kitchen—or, at least, her own versions of them! In her latest Instagram story, she shared a nostalgic dinner idea that’s quick, simple, and—it could be argued—a tad healthier.
“We’re trying to keep our movement of eating at home going,” Alex explained. “Last week, Mauricio and I did not order out for any meals, which might not sound like that big of an accomplishment, but for us—we’ve been in such an eating-out rut that that was a big achievement for us.”
We’ve all been there, especially on those nights when takeout feels way easier than turning the stove. But instead of caving in to Chipotle after a stressful day, Alex improvised a dinner inspired by a favorite childhood convenience food.
“I am improvising and I’m throwing something together but it’s going to be so yummy,” she joked. “I’m doing Goodles, which is like healthier—not saying this is healthy, but it’s healthier—Kraft mac and cheese pretty much, combined with some cut-up chicken sausage.” So basically, slightly elevated boxed mac and cheese with a little twist: “It’s kind of a healthier take on hot dog and mac and cheese that we all had as kids, but it’s going to be so good and I’m proud of myself for improvising this little meal,” she said.
As she’s done before, Alex poked fun at her own attempts at healthy cooking, sharing a photo of Kerrygold butter and joking, “And I’m using this fancy grass-fed butter so that makes it healthy right 😂.”
And to no one’s surprise, Alex’s meal came out looking delicious! She captioned the final dish with a cheeky, “Chef’s kiss! I can’t wait to make meals like this for Sofia when she’s older, hehe.”
Considering Alex’s knack for updating comfort food favorites, it probably wouldn’t hurt for her to always have the ingredients for chicken spaghetti (a staple among the Drummond kids’ favorite meals!) on hand. Sofia’s tastebuds have no idea what they’re in for!
