Prairie House Coffee Opens Shop at Its Home Roastery in Orlando

A little house of roasting in Orlando, Florida, called Prairie House Coffee recently opened the doors to a public coffee bar on-site, marking the second retail outpost for the brand founded by two sisters. 

In the College Park neighborhood north of downtown, the industrial setting of the roastery gets some warmth from wood accents against black walls. Communal tables sit near merch shelves and bags of house-roasted coffee, with a Typhoon roaster handling production batches in one corner.

“Our roastery is in a warehouse, in an industrial district. We wanted to hang onto that,” Prairie House Roastery Manager Rachel Sparks told Daily Coffee News of the vibe inside the newly opened location. “We also brought in some wood pieces to connect to our roots and bring in some warmth.”

Far from the Manitoba prairie house that inspired the brand, the shop leans into the company’s roots with Canadian flags inside and out — a more overt signal than the original shop’s cozy charm.

The original Prairie House Coffee cafe opened in 2021, founded by sisters Alexa Maisonet and Jade Dinsdale-Cyr, who spent many childhood days at their Scandinavian grandmother’s home on a Manitoba prairie.

Operating out of a historic house in Oakland, Florida, the health-focused original cafe offers bread and other baked treats made in-house, plus add-ins such as mushrooms and collagen, while avoiding hydrogenated oils, processed sugar, soy and preservatives.

After initially building their drink program around coffees from other roasters, the sisters brought roasting in-house in 2024 and began operating Prairie House Coffee Roasting out of the Coolidge Avenue warehouse. Jade Dinsdale-Cyr leads the roasting program. 

“We select exceptional, approachable and experimental coffees, prioritizing sustainability with a focus on single farms that embrace organic practices,” Sparks said. “We welcome opportunities to work directly with farmers or producers, and have been able to partner with some awesome importers to support farmers and producers season after season.”

The new bar focuses more intently on coffee craft while still offering a selection of fresh-baked goods.

“With our roastery, we wanted to speak to those who are interested in getting into the science, style and origins of coffee,” Sparks said. “Our goal with the cafe space at our roastery is to feature our roasting style in depth with a slow bar.”

A 1-group Sanremo You espresso machine stands alongside a Mahlkönig grinder on the simple bar, with manual pourover equipment also available for single cups.

“We just opened our cafe in January and are super excited to be a part of the College Park community,” Sparks said. “We are focused on continuing to grow our roasting program and we are excited to meet more of the coffee lovers around town.”
