香港夏天悶熱潮濕,食慾全無,入廚動力也欠奉,今天教大家來一道清爽開胃的「麻辣大蝦米紙卷」,簡單易做,絕對是懶人福音! 這道越南小食以鮮甜大蝦、麻辣醬料和多彩蔬菜包進煙韌米紙,配上酸甜沾醬,輕鬆喚醒味蕾。越南菜與廣東菜有着微妙淵源,兩者都講究食材新鮮、口感平衡,越南米紙卷的清新風格與廣東菜的涼拌小菜,有異曲同工之妙,同樣適合炎夏享用。 越南菜受中國飲食文化影響,特別是廣東菜的輕盈和注重原味。廣東涼拌海鮮常以酸甜醬汁提鮮,與越南米紙卷的魚露沾醬有相似之處;而米紙卷的蔬菜搭配則像廣東菜中的爽脆小碟,強調口感層次。 這款麻辣大蝦米紙卷結合越南的清新與麻辣的刺激,帶來夏日餐桌驚喜。米紙低卡(每片約二十卡),加上新鮮蔬菜和薄荷的清香,健康又美味,猶如讓味蕾來場越式小旅行!這道菜色澤鮮艷,鮮蝦彈牙、蔬菜爽脆,麻辣與酸甜交織,令人胃口大開。你也可加入芒果或牛油果,增添廣東菜式的果香創意。 麻辣大蝦米紙卷食譜(四人分量) 材料:越南米紙十二片(直徑約十六厘米)、大蝦十二隻(去殼去腸,煮熟)、米粉一百克(煮熟瀝乾)、青瓜一條(切絲)、紅蘿蔔一條(切絲)、生菜六片(撕成適中大小)、薄荷葉二十片、麻辣醬三湯匙(建議花椒油、辣椒醬、蒜蓉調製)、沾醬(魚露兩湯匙、青檸汁兩湯匙、糖一湯匙、蒜蓉一茶匙、辣椒碎適量、水兩湯匙)。 做法:準備一盤溫水,米紙逐片浸泡約十秒至軟化,取出平鋪於濕布上。大蝦對半切開,塗上麻辣醬增添風味。米紙中央放生菜,依次加入米粉、青瓜絲、紅蘿蔔絲、薄荷葉及大蝦。將米紙底部向上折,兩側向內折疊,捲成緊實米紙卷。將沾醬材料混合,攪拌至糖溶解。米紙卷切半,搭配沾醬上桌。 責任編輯:葉翠華 Source link
