In Cape Cod restaurant news this week, things continue to brew big-time in the coffee-and-pastries world while a Forbes four-starred restaurant in Chatham has a new chef.
In case you missed it last week, we wrote about new cafes in Buzzards Bay and Hyannis, including one with a creme brulee latte you crack open with a miniature mallet. Also, reporter Denise Coffey visited Cape Abilities Farm on its 20th anniversary.
Cuvée at Chatham Inn has new chef
“We’re so excited to have Executive Chef Bronson Waguespack at the helm of Cuvée,” according to a social media post.
Waguespack has “an extensive background working in highly-acclaimed, Michelin-starred environments globally, including the renowned NOMA (Copenhagen) and Le Normandie (Bangkok),” according to another Instagram post from Cuvée, located at the award-winning Chatham Inn.
Pain D’Avignon gets ready to open grab-and-go

As we reported recently, Pain D’Avignon is opening on Commercial Street in Provincetown. Chloe Adass, restaurant director, said the company hopes to open the new location around July 1 with a takeout-only menu ranging from frozen lasagna and pizza to chocolate croissants (her favorite) and other baked specialties like spinach-and-feta or ham-and-cheese chausson. Pain D’Avignon will also sell its own house-roasted coffee beans.
Asked if the new spot will be seasonal or year round, Adass said, “We will have to wait and see. I want everybody to come and have the best pastry and grab a frozen lasagna or pizza. We’re making life easier for everyone.”
Scratch-made cafe opens in Dennis
Proof Bakehaus opened last weekend at 12 Bridge St. in East Dennis – in the spot formerly occupied by Umami Pizza & Fusion.

The menu includes cruffins (a cross between croissants and muffins); cinnamon buns and pastries; and breakfast and lunch sandwiches with locally made deli meats on what the social media notice calls “a signature focaccia.”
“Breakfast sammies are a fan favorite (we sold over 900 in our first week!) Cinnamon buns and cruffins sell out early every day,” emailed Caitlyn Corrao, speaking for Proof Bakehaus.

There’s also coffee, vegan and gluten-free options, as well as “Doug Cups” for four-legged friends.
One of Proof Bakehaus’ popular drinks is the salty honey oat latte with cold foam, Corrao writes.
Proof Bakehaus is owned by two longtime Cape Cod chefs: Executive pastry chef Ashley Corrao and executive chef Andrew Reilly.
“We’re a locally-owned scratch bakery, meaning everything is made by hand, from real ingredients, right here. Whether you’re on the way to the beach, or want to sit and gab with your friends, we’ve got you” reads a Facebook notice for the new cafe
Proof Bakehaus is open 7 a.m. to 3 p.m. Thursdays to Mondays.
Tree House Brewing Company launches weekend coffee
“Imagine sipping a perfectly pulled espresso from an Adirondack chair as a tall ship glides through the mouth of the Cape Cod Canal.”
Now, you don’t have to imagine it.
Since 2021, Cape Codders and visitors have been able to enjoy sunsets — along with beer, cocktails, pizza and lobster rolls — at Tree House Cape Cod at 98 Town Neck Road in Sandwich.
Now, Tree House is offering something for early birds: specialty coffee drinks made with coffee beans grown around the world and locally roasted beans. The new weekend coffee service is open 7 to 11 a.m. Fridays, Saturdays and Sundays.
