KNOXVILLE, Tenn. (WVLT) – One week ago the Knox County Health Department launched a new website that gives parents a healthy eating option for dinner.
“This was a unique way we felt could offer a unique resource for families in Knox County to try new and delicious foods,” said Taylor McKently a nutritionist at the health department.
The website has recipes that had been vetted by Knox County nutritionists from websites and chefs that focus on helping families eat more fruits and vegetables, among other items.
“Having a nutritious diet is essential for optimal health,” said McKently.
Aside from fruits and vegetables, the goal is to factor in lean meats and whole grains, hoping families factor these ideas into their meals.
“I think that’s great, I think more people need to cook more, healthy meals at home and if there’s a resource for them to do that, I think that’s awesome,” said Knoxville mom Meagan Barton.
Barton has a handful of recipes she keeps in her back pocket to make sure her family is well fed even while on the go.
“Chicken and broccoli and rice is standard for us, like chicken thighs, roasted broccoli and rice that we do on soccer nights,” Barton said in addition to steak, chicken and salad.
The health department offers after school programs that allow kids to take home locally grow fresh fruits and vegetables. The hope is the new website will give those families new, delicious, and unique ways to utilize the food they take home.
“Part of our initiative is to provide fresh fruits and vegetable to participating after school programs where they get free fresh local produce once a month that their families can utilize at home,” said McKently. “And one way to do that, is by accessing these recipes so they know what to use and how to use it so they can enjoy a delicious meal or snack.”
