Potato quiche recipe that's crispy and healthy that 'will transform your life'

A doctor has shared her handy recipe that incorporates ingredients that most people will already have in their fridges and cupboards, something she says has “transformed my life”. Doctors, like many workers, are often on the go and recipes that are easy, filling, nutritious, and friendly to the wallet. These meals are handy when it comes to meal prepping or just cooking dinner after a long day at the office.

Dr Divya Sharma, author of ‘DoctorBowl: Quick + Simple Balanced Vegetarian and Vegan Food’, shared a handy recipe on TikTok, which has proved popular with users, amassing more than 11 million views and thousands of comments. In the viral clip, Dr Sharma makes an appetising and straight-forward smashed potato pie. She first smashes five boiled potatoes in a round baking tray and then pops oil, salt, and spinach on top of it, followed by chopped-up tomatoes and bell peppers.

She then goes in with her three eggs, which have been cracked and mixed with milk, and cheese to top it off.

“The base of crispy smashed potatoes has transformed my life… you HAVE to make it!” she wrote in the caption of the post.

Once all of her ingredients are placed in the dish, she pops it into her oven which has been preheated to 200C. After 25 to 30 minutes, she takes it out and shows a crispy, quiche-like dish.

Here are the exact ingredients she used:

5 potatoes

Large handful of chopped spinach

Half a chopped yellow bell pepper

Handful of halved cherry tomatoes

3 eggs

Half a cup of milk

Handful of cheese

Dr Sharma combined a number of ingredients that are known to have positive health benefits. Potatoes, according to Healthline, contain a number of important nutrients such as protein, carbs, fibre, vitamin C, vitamin B6, and potassium.

Eggs, meanwhile, are high in protein as well as vitamin B12, vitamin B6, and vitamin A. Additionally, incorporating the spinach, tomatoes, and bell peppers helps towards reaching your five-a-day.

Many TikTok users took to the comments to share their appreciation for the recipe, with one personal trainer writing: “Did you just make a quiche with a potato base?! Genius!! I’m totally trying this!”

Another person suggested: “Three words: sprinkle of feta.

“Damn, that looks good. Potatoes have been villainized for way too long,” a third shared.
