Nutrition expert and online sensation Emily English has whipped up a buzz with her healthy take on brownies.
The health guru and best-selling author of ‘So Good’, transforms classic comfort foods into nutritional powerhouses – much to the delight of followers on social media.
Earlier this year, Emily divulged her secret recipe for fudgy chocolate brownies with a healthy twist; by making smart ingredient swaps, she’s managed to boost the protein content to a robust 9g per serving whilst keeping the taste utterly divine, reports Surrey Live.
Emily swaps traditional ingredients for additions like cottage cheese to create brownies that are not just irresistible but a “winner” in terms of nutrition.
Emily said: “Whenever I see a recipe for a healthy dessert, I’m always highly sceptical; are the swaps actually going to taste any good, and should I not just enjoy the original in a bit of moderation?
“Using ingredients you’d typically have for breakfast, with a balance of protein, healthy fats and fibre. You can adjust the sweetness to your taste, and there’s no weighing scales needed either.”
Instagram user @shapeshifterleeds said: “Glad you started out saying highly sceptical @emthenutritionist .. because same!! Your book is incredible though and the chicken lasagne has been made 4 times in 2 weeks now, family fave done.”
@kaykaur000 commented: “I made these today and they are so delicious. I’m surprised how fudgy they are. Yum,” while @coelhdc couldn’t hide their delight, adding: “These are so delicious! Honestly was surprised at how good they taste, thanks for creating this recipe.”
For those with a sweet tooth looking to indulge without the guilt, Emily’s fudgy cottage cheese brownies might just be your new go-to recipe.
Preheat the oven to 160℃ fan. Place all the ingredients into a blender and blend until smooth.
Pour into a lined baking dish or loaf tin.
Bake for around 20 to 25 minutes until just set to keep it fudgey. If it looks too runny, cook for another five minutes.
Remove and cool for one to two hours before slicing and serving with yoghurt and honey.
You can warm up to make extra fudgy when eating. The brownies should be stored in the fridge.
