Eating plant-based, whole food — best for you and for the planet — is not expensive; as a matter of fact the two foods with the most nutrients per dollar are sweet potatoes and red cabbage. However, chopping up vegetables is more time consuming than throwing a piece of meat on the griddle.
For those who don’t like to cook, don’t have time to cook, or who just need a break from cooking, today’s column is about options for prepared plant-based, whole food meals that in some cases can be delivered to your doorstep.
Two local options:
- Lisa Moretti is founder, owner, and chef of The Voracious Vegan, LLC, in New Castle. She is plant-based herself, and is licensed as a Food For Life Instructor by PCRM (Physician Committee For Responsible Medicine). She provides “nourishing, plant-based cuisine” for individuals, dinner parties, retreats, and special events. She is also teaches healthy cooking classes. My wife and I can vouch for her tasty, healthy, plant-based meals, which we pick up every Tuesday in Glenwood. For $115 a week we get 4 meals—a meal for each of us for Tuesday and another meal (different recipe) for each of us for Wednesday. The portions are generous, and we always have some leftovers. - Tuesday Foods has a presence in the Roaring Fork Valley, Boulder, and Denver. They make and deliver plant-based, whole food meals which they deliver on Tuesdays from Aspen to Glenwood. You can sign up for various meal plans. Their website is Tuesdayfoods.co.
Non-local options are many if you go on the internet and Google plant-based meals delivered. Some of these options are frozen meals; some are dehydrated to which you just have to add water; some have to be cooked; and some are just the ingredients for meals. A few are mentioned below:

- Purple Carrot has been around for years and is at the top of many lists comparing various delivered plant-based meal options.

As a reminder, everyone of any age who is 100 percent plant-based (or close to 100 percent) needs to be taking a daily vitamin B12 supplement, as does anyone 50 and older no matter what they eat. Next week’s column will be about healthy local options for eating out.
