For college students, cooking on a budget isn’t easy. To help resolve that, a group in Anne Arundel County created a cookbook filled with affordable recipes that also reflect their heritage.White beans, corn, chili and garlic are just a few of the ingredients in Brandi Benton’s white chicken corn chili, which is one of 18 recipes featured in Anne Arundel Community College’s new cookbook, called simply, “AACC Pantry Cookbook.””Healthy and cheap, that’s insane; that’s what we want. It’s so hard these days to find stuff that’s healthy,” Benton told 11 News.To highlight the issue of food insecurity, students enrolled in the “World Culture and Cuisine” class were challenged to create recipes using ingredients found in the college’s food pantry at the student union. The students would only have a budget of $5 to $7, at most.”It’s absolutely essential. There are some students that are unhoused. There are some students that really would be scraping together what they would be eating, and I see them once twice or three times a week,” said Bethany Tatro, the college’s basic needs coordinator.The cookbook is broken down by categories, including desserts, and each recipe had to be healthy.”People want to eat like anybody who has a great paycheck coming in. They don’t want to just eat macaroni and cheese or cereal,” Tatro told 11 News.The cookbook includes pictures and step-by-step directions. Many of the recipes are tied to students’ heritage and culture and each comes with a short description.”I got this recipe from my grandmother. She used to make this for my family as well,” Benton told 11 News. The food pantry runs on donations, and you can support them by visiting their Amazon wish list. People can also stop by the bookstore to get a copy of cookbook, and a digital copy is available online.
