EL PASO, Texas (KFOX14) — In a world where eating healthy can be a challenge, Evolution Foods is making it easier for El Paso residents to enjoy nutritious meals without the hassle. Chef Aurelio, the mastermind behind this local meal prep business, shared his passion for cooking and the inspiration behind Evolution Foods.
“I’ve always just loved cooking. I’ve always just loved food, the dynamic of it,” said Chef Aurelio. “The inspiration was just bringing in a different kind of food for people to enjoy on a daily basis.”
The name Evolution Foods reflects the ever-changing menu, which updates every two weeks. “The menu does change every two weeks,” he said. “We also sell fresh food. We have a restaurant that’s about to open up here soon as well.”
Chef Aurelio described some of the popular dishes, including a ground turkey kale Alfredo with sun-dried pesto and asparagus, and a slow-cooked brisket with red potato mash and a side of vegetables. “This is one of our top selling plates,” he said.
In addition to meals, Evolution Foods offers hand-pressed, 100% natural detox juices. “These are hand pressed detox juices. They have actually started selling quite a lot, and the feedback has been amazing,” said Chef Aurelio.
Looking ahead, Chef Aurelio is excited about opening a new restaurant next door, focusing on Mexican-Asian fusion cuisine. “It’s gonna be very heavy in, like, Mexican Asian fusion. So we’re gonna have sushi, tacos, tortillas made from scratch,” he said.
Chef Aurelio believes meal prepping is the future of healthy eating. “Meal prepping is pretty much the way of the future for people to eat, to stay consistent at least eating, you know, something healthier than going to McDonald’s or Whataburger,” he said.
With plans to continue feeding as many people as possible, Chef Aurelio is committed to making a positive impact on the El Paso community.
