If you’re last-minute planning your Super Bowl menu, Bobby Flay just posted some recipe inspiration that you’ll love for game day. And you’re bound to have this cozy dinner on repeat for weeks to follow.
“For the big game, I’m going to make a chili, a vegetarian chili,” the chef shares in a recent Instagram video. “Jimmy Fallon exclaimed on his show when I was on that he loved this recipe.” Here’s how to make Flay’s go-to “very healthy, very flavorful” chili recipe.
Flay dices up his fresh ingredients: red onion, a poblano pepper and a yellow pepper. He also has cooked chickpeas, cooked black beans, roasted sweet potatoes, crushed garlic and fresh herbs like scallions, oregano and cilantro on standby. For the liquid base of the chili, the Beat Bobby Flay star recommends “good quality canned tomatoes” and vegetable broth.
Using his GreenPan dutch oven—which Flay loves, as he can “cook in it and serve out of it”—the chef cooks down his diced veggies before adding in garlic and his seasonings of choice: chili powder, cayenne pepper and cumin. After pouring in the canned tomatoes and vegetable broth, Flay adds in his legumes, sweet potatoes and salt and black pepper to taste.
“We want all the flavors to meld together,” Flay notes as he lets the chili simmer on the stove. Once ready to serve, he tops the chili off with his chopped herbs for a fresh bite. The result is a gorgeous, comforting pot of chili that’s easy enough to make for weeknight dinners. Plus, it’s packed with protein and fiber, so a bowl of it is bound to keep you satisfied for the evening.
