DarkSide

2/F, Rosewood Hong Kong, 18 Salisbury Road, Tsim Sha Tsui
Consistently ranked among Asia’s top bars, Rosewood Hong Kong’s DarkSide celebrates rare aged spirits, vintage cigars and confident classic cocktails to a backdrop of live jazz. Its latest menu pays tribute to the area that gives it its name: Kowloon. Take, for example, the Red Brick, a cocktail inspired by the former Pumping Station featuring peach, passionfruit, mango, citrus, hibiscus, nutmeg, chilli flakes and Fino Sherry.
Avoca

38/F, Mondrian Hong Kong, 8A Hart Avenue, Tsim Sha Tsui
High up on the 38th floor of the Mondrian in Tsim Sha Tsui is Avoca, a bar so great even comedian Jimmy O Yang paid a visit during his recent stay in Hong Kong. Local Hong Kong flavours inform its new menu, with drinks that include the Ginger Pudding, which reinterprets the classic dessert by using ginger vodka, spiced syrup, Super Lemon and cream foam.
Terrible Baby

4/F, Eaton Hong Kong, 380 Nathan Road, Jordan
Inspired by the expression enfant terrible, Eaton Hong Kong’s Terrible Baby embodies the notion of the passionate young non-conformist who constantly pushes the boundaries. The concept translates into a menu that’s enticingly rebellious, with cocktails such as Dong Ling Cha, a play on Hong Kong’s classic iced lemon tea using upcycled cold brew dark rum, Campari, grapefruit and Vita sparkling lemon tea.
Qura

Lobby, Regent Hong Kong, 18 Salisbury Road, Tsim Sha Tsui
With views of Victoria Harbour and an eclectic menu of cocktails and rare spirits, Qura Bar is Regent Hong Kong’s ode to the Art Deco era. Our favourites include Chromatic Cascades, which combines agave, hops, citrus, passion fruit, peanut butter, herbs and Los Siete Misterios Dobe-Yaj mezcal, and Symmetry, featuring sour cherry, tomato, citrus, wasabi, pink grapefruit, Mancino Secco and Matusalem Ron L’Insolito Wine Cask.
